Unagi (ウナギ) is the Japanese word for freshwater eel, especially the Japanese eel, Anguilla japonica . Unagi is a common ingredient in Japanese cooking, often as kabayaki. It is not to be confused with saltwater eel, which is known as anago in Japanese.
